SYNERGY OF PLANT EXTRACTS IN THE COMPOSITION OF JUICE-CONTAINING GERODIETETIC BEVERAGES

The article presents the results of scientific substantiation and improvement of the formulation of juice-containing beverages intended for gerodietetic nutrition using blueberry juice (Vaccinium myrtillus L.) and extracts of medicinal plants – peppermint (Mentha piperita L.) and St. John’s wort (Hypericum perforatum L.). The relevance of the research is determined by the growing need to develop a new generation of functional food products that combine high biological value with preventive and health-promoting properties aimed at supporting the physiological functions of middle-aged and elderly people. Particular attention is paid to the role of natural polyphenols, flavonoids, and anthocyanins in reducing oxidative stress and improving vascular and nervous system function. The purpose of the study was to develop an optimal beverage formulation and to determine the technological parameters that ensure a high content of bioactive compounds, stable antioxidant activity, and acceptable sensory characteristics during storage. The influence of raw material ratios, extraction conditions, and blending parameters on the physicochemical and functional properties of the beverage was evaluated. Physicochemical, spectrophotometric, and organoleptic methods were applied in accordance with national (DSTU) and international standards to determine acidity, soluble solids, total phenolic content, anthocyanin concentration, antioxidant activity, and consumer acceptability. The results obtained confirm the feasibility of using blueberry juice in combination with peppermint and St. John’s wort extracts in the composition of functional gerodietetic beverages. The developed drink exhibits pronounced antioxidant and mild neuroprotective properties, which makes it suitable for inclusion in diets aimed at the prevention of age-related metabolic and cardiovascular disorders. The product demonstrates good stability of biologically active compounds during storage and meets quality and safety requirements.
